Venison Scallopini

Ingredients
  • 2.5 lbs Venison 
  • Fat for frying 
  • 1 tsp. sugar 
  • 1.25 c. tomato puree 
  • seasoned flour (with salt, pepper, and paprika) 
  • 2 medium onions, peeled and sliced 
  • 1 (4 oz.) can mushrooms 
  • 1.25 c. hot water 
  1. Wipe meat with cloth soaked in vinegar.
  2. Cut into serving pieces and roll in seasoned flour.
  3. Fatten slightly with edge of plate or meat pounder.
  4. Fry golden brown on both sides.
  5. Add onions after first turning.
  6. Place in greased casserole,
  7. add remaining ingredients.
  8. Bake about 2 hours or until tender.
